Cyclospora, climate, and why produce keeps making us sick

As water systems warm and weather destabilizes, cyclospora outbreaks are becoming more frequent and harder to predict. Here's what's actually happening to our food.

The cyclospora outbreak currently spreading across 41 states is being treated as an isolated food-safety failure. It’s not. It’s a preview of how climate instability will keep destabilizing our food system — and why traditional food-safety fixes won’t be enough. The House Democrats investigation into Taylor Farms reveals how quickly a single processor’s failure can sicken tens of thousands across the country.

To understand why, you need to know how cyclospora actually spreads. The parasite Cyclospora cayetanensis lives in human feces. Once it contaminates water — whether through sewage overflow, agricultural runoff, or cross-contamination during processing — it can infect anyone who eats produce grown or washed in that water. It’s simple. It’s preventable. And it’s becoming harder to prevent as the climate changes.

Why climate matters more than you think

Cyclospora thrives in specific conditions. The parasite requires warm, humid environments to become infectious. Rising temperatures are expanding the geographic range where cyclospora can survive and spread. Extreme rainfall events — which climate change is intensifying — overwhelm water-treatment systems and trigger agricultural runoff that carries fecal pathogens directly into produce fields. Drought, conversely, concentrates contamination in limited water supplies.

The current outbreak, centered on imported lettuce from Taylor Farms, is a perfect storm. Workers in warm climates. Water systems stressed by heat and irregular precipitation. A supply chain that moves fresh produce across the country faster than health officials can track it. All of these factors are getting worse as the planet warms.

The water connection is everything

The CDC traces most cyclospora outbreaks back to contaminated water used in growing or processing fresh produce. In the United States, this usually means imported vegetables from regions with less robust water treatment and sanitation infrastructure. But that’s only part of the story. Even domestic produce is at risk when local water systems fail — and climate change is making water-system failures more frequent.

Heavy downpours flush sewage into agricultural areas. Droughts concentrate existing contamination. Warming waters allow pathogens to survive longer and spread faster. None of this is theoretical. The USDA and FDA have both flagged climate-related water contamination as an emerging food-safety threat. The current outbreak is the system working exactly as predicted.

Why food-safety inspections alone can’t fix this

Taylor Farms is one of the nation’s largest produce processors. The outbreak has sickened more than 4,100 confirmed cases, with an additional 7,400 cases awaiting confirmation. That scale shows the problem: when one facility controls that much of the supply chain, a single contamination event cascades across the entire country before anyone realizes it’s happening. Corporate consolidation in food processing has created exactly these kinds of chokepoints, where a single failure ripples through the entire system.

The standard food-safety response — investigate the facility, tighten traceability, strengthen protocols — treats cyclospora as a one-off failure. But if water systems are becoming less reliable, if climate instability is making contamination more likely, then the old playbook won’t work. You can’t inspect your way out of a systemic problem.

The harder conversation: adaptation

What this outbreak is really asking is uncomfortable. As climate change makes it harder to keep water clean and food safe, how much of our current food system can actually survive? Produce is cheap and convenient because we’ve externalized the cost of water treatment, sanitation, and worker safety. Climate change is making that bill come due.

Some of that means infrastructure: better water treatment, more robust agricultural sanitation, stronger traceability systems. But infrastructure alone won’t be enough. It also means rethinking scale and consolidation — systems that depend on moving massive volumes of perishable food across the country quickly are inherently fragile when the climate is becoming chaotic.

It means prioritizing local and regional food systems that don’t depend on continental supply chains. It means investing in regenerative agriculture that builds soil health and reduces runoff. It means paying farmworkers enough to stay out of the kinds of conditions that spread cyclospora in the first place — and demanding real protections for the people who grow and process our food.

The House Democrats’ investigation into Taylor Farms will probably result in stronger protocols and higher fines. Those steps matter. But unless we confront the climate reality underneath — that our current food system was built for a stable climate that no longer exists — the next outbreak is already guaranteed.

For now, that means being skeptical of produce that’s traveled far, supporting local growers who can be held accountable, and pushing for the kind of food-system resilience that doesn’t depend on luck and inspections to keep us safe.
